Watermelon Rind Stir-Fry

  • 1 tablespoon peanut oil
  • 1 onion, thinly sliced

  • 1 cup peeled and sliced watermelon rind
  • 1 red bell pepper, sliced skinny
  • 1 cup vegetable broth, divided
  • 1/four cup teriyaki sauce
  • 2 tablespoons cornstarch

Instructions :

  • Heat the peanut oil in a big skillet over medium warmness till the oil just starts to smoke; cook and stir the onion, garlic, and salt inside the warm oil till the onions are translucent, approximately 2 minutes.
